Crunchy Buckwheat Granola

Happy New Year everyone!

A new year usually brings with it resolutions or goals for the upcoming year. One of my goals for 2019 was to teach yoga at a beach resort, and I’m proud to say that I accomplished my goal a couple weeks ago!


I was given the opportunity to teach yoga in Cuba at The Royalton Cayo Santa Maria from January 5 - 12, and it was such an amazing experience. I taught yoga every morning at 10am, overlooking the white sand and turquoise ocean. My students had fantastic energy, and were so appreciative for the practice.


That being said, this trip didn’t come without some anxiety; I had never done something like this before, and there were many unknowns and things out of my control. Everything ended up working out better than I could have expected, but looking back on the trip, I realized that the best part wasn’t reading and relaxing on the beach every afternoon (although that was lovely), it was accomplishing my goal, despite my fear and anxiety.



One of my favourite quotes is: “Courage is not a feeling. Courage is a noun, the strength to go forward even in the face of fear.” If you have a goal that you’d like to accomplish for 2019, and it’s causing some fear, I encourage you to go for it.


While I had a fantastic time in Cuba, I was eager to get home to my boys, bunker down and get cozy. One of my favourite things to do on a Sunday is meal prep. I love going into the week with a fridge full of healthy food prepared. Lately, one of my favourite meal prep recipes is my Crunchy Buckwheat Granola. It adds the perfect crunch to chia pudding or Greek yogurt and fresh fruit.


Buckwheat is one of my favourite carbs these days because it’s wheat and gluten free, (it’s actually a seed!) and higher in protein and fibre than most carbs. I’m not on the paleo or keto diet, and I’m not gluten or wheat free, but my body feels the best when I eat higher quality carbs that aren’t processed (ie. sweet potato, spaghetti squash, plantain, quinoa, buckwheat, chickpea pasta). Crunchy Buckwheat Granola

Ingredients

Dry: 1-½ cups buckwheat groats

⅓ cup ground flaxseed ½ cup hemp seeds ¼ cup coconut palm sugar 2 tsp. cinnamon ½ tsp. salt

Wet: 2 tbsp. coconut or olive oil ¼ cup unpasteurized honey or agave syrup

3 tbsp. natural nut or seed butter 1 tsp. real vanilla extract


Method

Preheat oven to 300F, and line a baking sheet with parchment paper.

In a large bowl, mix together the dry ingredients. In a small bowl, whisk together the wet ingredients until smooth.


Add the wet ingredients to the dry, and stir until combined. Spread mixture out on the baking sheet and bake for 20 minutes. Remove from oven and loosely toss. Bake for an additional 15 – 18 minutes.


Let mixture cool on baking sheet (this is when it gets really crunchy). Once cooled, store in an airtight container in the fridge. Will keep for 2 weeks.
