As a busy parent, I know how hard it can be to juggle work, kids' activities, and holiday events while still finding time to prepare healthy meals. It’s a season where efficiency and nourishment take center stage. That’s why I rely on recipes that are not only family-approved but also simple, healthy, and provide leftovers to ease the daily hustle.


Enter my Slow Cooker Lasagna Soup: a comforting, lighter twist on traditional lasagna that ticks all the boxes for busy families - easy, healthy and yummy.


Here’s what makes it a healthy choice:

  • Brown Rice Lasagna Noodles: These gluten-free noodles add a high-fiber element to the soup, keeping everyone satisfied. No taste difference, and the same cooking instructions.

  • Wholesome Base: A simple combination of chicken stock, diced tomatoes, and marinara sauce creates a rich yet light broth that's full of flavour.

  • Lean Protein: Ground turkey takes the place of beef, offering a leaner, heart-healthy option.

  • Control the Cheese: The ricotta cheese is added individually when serving, adding a creamy texture without taking over.

  • Add Veggies: You can make this soup your own by adding extra veggies like mushroom, zucchini and/or baby spinach.


With 14 ice times in seven days, and a piano recital thrown into the mix this soup is a lifesaver for my family this week! It’s hearty, packed with flavor, and reheats beautifully for quick meals after practice or school events.
